Instructions

  1. Mix the base: In a bowl, combine the room-temperature mascarpone cheese, powdered sugar, vanilla extract, cooled espresso, and cocoa powder. Mix thoroughly until the mixture is smooth and evenly blended.
  2. Incorporate ladyfinger crumbs: Stir in the ladyfinger crumbs until the mixture thickens into a dense, moldable consistency. Cover the bowl and refrigerate for 1 hour to firm up.
  3. Shape the truffles: Once chilled, scoop out portions of the mixture and roll them into 1-inch balls with your hands. Place the formed truffles on a parchment-lined tray for easy handling.
  4. Freeze to set: Freeze the rolled truffles for 15–20 minutes to help them firm up and make the coating process easier.
  5. Melt the chocolate: Using a double boiler or microwave in short bursts, melt the semi-sweet or dark chocolate until smooth and glossy, ready for dipping.
  6. Coat the truffles: Dip each chilled truffle into the melted chocolate, tapping off any excess coating. Place them back onto the parchment-lined tray to set.
  7. Add optional decoration: If desired, drizzle melted white chocolate over the coated truffles and sprinkle mini chocolate chips on top for extra texture and flavor.
