  • 1 teaspoon kosher salt
  • 1 large egg, room temperature
  • 3 ½ cups (444.5 g) bread flour

Cinnamon Honey Butter

  • ¼ cup (½ stick / 57 g) unsalted butter, softened
  • 2 tablespoons confectioners’ sugar
  • 2 tablespoons honey
  • ½ teaspoon cinnamon

Instructions

  1. Activate yeast mixture: In the bowl of a stand mixer with a dough hook, combine warm water, 1 teaspoon of sugar, and active dry yeast. Let it sit for about 5 minutes until the mixture becomes thick and the yeast dissolves completely.
  2. Add remaining wet ingredients: Add the remaining 5 tablespoons of sugar, warm milk, 6 tablespoons melted butter, and kosher salt to the yeast mixture. Mix until just combined.
  3. Add egg: Incorporate the room temperature egg into the mixture and blend to combine thoroughly.
  4. Add flour and mix: Gradually add the bread flour to the mixture. Beat on medium-high speed for about 3 minutes until fully integrated, scraping the dough off the sides as needed.
  5. Knead dough: Reduce speed to low and knead the dough for an additional 3-4 minutes until it becomes smooth and elastic.
  6. First rise: Lightly spray a large bowl with nonstick cooking spray, place the dough inside, cover it with a clean kitchen towel or plastic wrap, and let it rise in a warm place for 1-2 hours, or until doubled in size.
