Ingredients

Scale

Cake Batter

  • 2.5 cups All-Purpose Flour
  • 1.5 cups Granulated Sugar
  • 0.5 cup Unsalted Butter (Softened)
  • 1 tsp Baking Powder
  • 0.5 tsp Baking Soda
  • 0.5 tsp Salt
  • 1 cup Sour Cream
  • 2 Large Eggs
  • 1 tsp Vanilla Extract

Streusel Topping

  • 0.5 cup All-Purpose Flour
  • 0.5 cup Brown Sugar (Packed)
  • 0.25 cup Unsalted Butter (Cold and cubed)
  • 1 tsp Cinnamon

Instructions

  1. Preheat and Prepare Pan: Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan to prevent sticking and ensure even baking.
  2. Cream Butter and Sugar: In a large bowl, cream together the softened butter and granulated sugar until the mixture is light and fluffy, which helps create a tender crumb.
  3. Add Eggs and Vanilla: Beat in the eggs one at a time, ensuring each is fully incorporated before adding the next. Stir in the vanilla extract to add depth of flavor.
  4. Mix Dry Ingredients: In a separate bowl, whisk the flour, baking powder, baking soda, and salt together to evenly distribute the leavening agents.
  5. Combine Wet and Dry: Gradually add the dry ingredients to the wet mixture, alternating with the sour cream, beginning and ending with dry ingredients. Mix just until combined to avoid overworking the batter.
  6. Make Streusel Topping: In a small bowl, combine flour, brown sugar, cold cubed butter, and cinnamon. Cut the butter into the mixture using a pastry blender or your fingers until it resembles coarse crumbs.
  7. Assemble: Pour the batter into the prepared pan and spread it evenly. Sprinkle the streusel topping evenly over the batter to cover the surface.
  8. Bake: Bake in the preheated oven for 35-40 minutes, or until a wooden skewer inserted into the center comes out clean.
  9. Cool and Serve: Let the cake cool in the pan before cutting into squares. Serve warm or at room temperature with coffee or tea.

Notes

  • Ensure the butter for the streusel topping is cold for a better crumb texture.
  • Don’t overmix the batter once the dry ingredients are added to keep the cake tender.
  • You can add chopped nuts like pecans or walnuts to the streusel for added crunch.
  • This cake is best enjoyed fresh but can be stored in an airtight container for up to 3 days.
  • For variety, sprinkle some cinnamon sugar on top before baking for an extra cinnamon kick.
