  • 1/2 cup water (reserved from boiling noodles)
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • Salt & pepper to taste

Instructions

  1. Cook noodles: Boil noodles according to package instructions until tender but firm. Drain well and set aside, reserving about half a cup of the cooking water.
  2. Sauté garlic: Heat the shiitake mushroom oil in a large pan over medium heat. Add the minced garlic and cook for 30 seconds to 1 minute until fragrant and lightly golden, taking care not to burn it.
  3. Make sauce: Stir in the soy sauce, brown sugar, and chili flakes into the pan with the garlic. Continue stirring until the sugar has fully dissolved and the sauce is well combined.
  4. Toss noodles: Add the cooked noodles to the pan along with the reserved noodle water, garlic powder, smoked paprika, and salt and pepper to taste. Toss or stir vigorously to evenly coat the noodles with the flavorful sauce.
  5. Finish: Remove the pan from heat and garnish the noodles with sliced green onions and sesame seeds. For extra heat, drizzle chili oil over the top as desired before serving.
