Ingredients

Scale

Dough

  • 1 package refrigerated pizza dough (or homemade pizza dough)

Filling

  • 1 1/2 cups marinara sauce or pizza sauce
  • 1 1/2 cups shredded mozzarella cheese
  • 1/2 cup pepperoni slices (or your choice of toppings such as sausage, mushrooms, bell peppers, olives)
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon red pepper flakes (optional)

Other

  • Olive oil for brushing (optional)

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) to prepare for baking the pot pies.
  2. Prepare Ramekins: Lightly grease 4-6 small ramekins or oven-safe bowls to prevent sticking and make removal easy.
  3. Roll Dough: Roll out the pizza dough on a lightly floured surface until it is about 1/8 inch thick to create a thin crust that will fit well in the ramekins.
  4. Cut Dough: Cut the rolled dough into circles or squares large enough to line your ramekins with an extra 1 inch overhanging edge for sealing later.
  5. Form Crusts: Gently press the dough pieces into the bottom and up the sides of each ramekin, shaping them into individual crusts.
  6. Add Sauce: Spoon approximately 2 tablespoons of marinara or pizza sauce into the bottom of each dough-lined ramekin as the base layer.
  7. Add Cheese: Sprinkle 2-3 tablespoons of shredded mozzarella cheese evenly over the sauce to add cheesy richness.
  8. Add Toppings: Place a few slices of pepperoni or any other desired toppings of your choice on top of the cheese layer.
  9. Season: Sprinkle some grated Parmesan cheese, dried oregano, dried basil, garlic powder, and red pepper flakes (if using) over the toppings for enhanced flavor.
  10. Top with Cheese and Seal: Add a final layer of mozzarella cheese on top, then fold the overhanging dough edges over the filling to partially cover the top of each pot pie.
  11. Brush with Olive Oil: Optionally brush the tops with olive oil to give the crust a beautiful golden finish when baked.
  12. Bake: Place the prepared ramekins on a baking sheet and bake in the preheated oven for 20-25 minutes or until the dough is golden brown and the cheese is melted and bubbly.
  13. Cool: Allow the pot pies to cool for 5 minutes to set before serving to avoid burns and let flavors meld.
  14. Serve: Serve the pizza pot pies hot, optionally with extra marinara sauce on the side for dipping.

Notes

  • You can substitute pepperoni with any preferred pizza toppings such as cooked sausage, sautéed mushrooms, bell peppers, or olives for customization.
  • Ensure to grease ramekins well to help the pies release easily after baking.
  • Use a sharp knife or a pizza cutter to cut dough evenly for consistent pot pie sizes.
  • Brushing with olive oil before baking helps achieve a crisp, golden crust but can be omitted for a lighter version.
  • These pot pies can be prepared ahead of time and refrigerated before baking; just add a few extra minutes to baking time if baking cold.
