Instructions

  1. Mix base ingredients: In a bowl, combine 2/3 cup peanut butter with 2 tablespoons of maple syrup until smooth and well blended.
  2. Add oats: Stir in 3/4 cup of rolled oats until fully incorporated to create the oat mixture for the base.
  3. Form bases: Press the oat mixture evenly into silicon molds using a spoon or cookie scoop—about 2 tablespoons per base—to form the bottom layer of each cup.
  4. Prepare filling: Either place a dollop of plain peanut butter or mix 1/2 cup peanut butter with 3 tablespoons protein powder, then spread this mixture atop each oat cup. Freeze for 20 minutes to set.
  5. Melt chocolate: While freezing, melt 1 cup chocolate chips with about 2 teaspoons oil in the microwave, heating in 30-second intervals and stirring well between increments until smooth.
