For the Rolls:
- 8 oz feta cheese, crumbled
- 1 cup ricotta cheese
- 1 tsp fresh thyme leaves (optional)
- 6 sheets phyllo pastry (cut in half lengthwise to make 12 sheets)
- ¼ cup melted butter or olive oil (for brushing)
For the Chili Honey:
- ¼ cup honey
- ½ tsp red chili flakes (adjust to taste)
- Prepare the Filling: In a bowl, mix the crumbled feta, ricotta, and thyme until smooth and evenly combined. Set aside.
- Prepare the Phyllo: Cut phyllo sheets in half lengthwise to create 12 strips. Keep them covered with a damp towel to prevent drying out while assembling.
- Assemble the Rolls: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper. Place a strip of phyllo on a clean work surface and brush it generously with melted butter or olive oil. Spoon about 1 tablespoon of the cheese filling near one end of the strip. Fold the sides in to enclose the filling and roll it up tightly. Place the roll seam-side down on the prepared baking sheet. Repeat this process with all the phyllo strips and filling.
- Bake the Rolls: Lightly brush the tops of the rolls with additional melted butter or olive oil to ensure a golden and crispy finish. Bake them in the preheated oven for 15–20 minutes, or until they turn golden brown and crisp.
- Make the Chili Honey: While the rolls are baking, warm the honey in a small saucepan over low heat. Add the red chili flakes and stir gently for 1–2 minutes to infuse the honey with a spicy kick. Remove from heat once fragrant.
- Serve: Drizzle the warm chili honey over the freshly baked rolls or serve it on the side as a dipping sauce. Garnish with extra fresh thyme if desired for an added layer of aroma and flavor.
Notes
- Keep phyllo covered with a damp cloth to prevent it from drying out and becoming brittle during assembly.
- You can use either melted butter or olive oil for brushing, depending on your preference for flavor and richness.
- Adjust the amount of chili flakes in the honey to make it milder or spicier according to your taste.
- Serve these rolls warm for the best texture and flavor experience.
- Phyllo pastry is delicate; handle it gently to avoid tearing while assembling the rolls.
