Scale

Main Ingredients

  • 1/3 cup oil-packed sun-dried tomatoes, roughly chopped, oil reserved
  • 46 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 2 teaspoons smoked paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon red pepper flakes
  • 1 box (1 pound) pasta of choice
  • 4 cups water or broth, plus more as needed
  • 1 cup hummus, homemade or store-bought
  • 1/2 cup fresh basil, chopped
  • Zest and juice of 1 large lemon
  • Kosher salt, to taste

Instructions

  1. Sauté Sun-Dried Tomatoes and Garlic: In a large pot over medium-high heat, sauté the sun-dried tomatoes and minced garlic until fragrant, about 1 minute, being careful not to burn the garlic.
  2. Add Spices and Tomato Paste: Stir in the tomato paste, smoked paprika, dried oregano, and red pepper flakes. Continue cooking and stirring often until the tomato paste is evenly mixed and begins to darken slightly, about 3 minutes.
  3. Add Pasta and Liquid: Add the dry pasta to the pot and toss it with the flavored oil and spices to coat evenly. Pour in 4 cups of water or broth, adding a little more if necessary to ensure the pasta is fully submerged.
  4. Cook Pasta: Bring the mixture to a boil, then cook until the pasta is al dente and most of the water is absorbed, approximately 8 to 10 minutes. Stir occasionally to prevent sticking.
  5. Add Hummus and Finish Sauce: Stir in the hummus until the sauce becomes creamy and smooth. Mix in the lemon zest, lemon juice, freshly chopped basil, and season with kosher salt to taste.
  6. Serve: Serve the creamy hummus pasta warm, garnished with additional basil if desired. Enjoy your vibrant and delicious one-pot meal!
