Chicken:

  • 2 cups chicken broth
  • ½ cup BBQ sauce
  • ¼ cup honey

Vegetables:

  • 1 cup mixed vegetables (frozen or fresh)

Instructions

  1. Season and Sear the Chicken: In a large skillet over medium heat, season the chicken thighs or breasts with garlic powder, onion powder, smoked paprika, salt, and pepper. Sear the chicken for about 5 minutes on each side until nicely browned and cooked through.
  2. Prepare the BBQ Honey Sauce: In a small bowl, whisk together the BBQ sauce and honey until well combined. Pour this mixture evenly over the seared chicken in the skillet.
  3. Add Rice and Broth: Add the long-grain rice and chicken broth to the skillet. Stir gently to combine all ingredients, ensuring the rice is submerged in the liquid.
  4. Simmer and Cook Rice: Bring the contents of the skillet to a simmer. Cover with a lid and cook on low heat for about 20 minutes, or until the rice is tender and has absorbed the broth.
