Ingredients

Scale

Crust and Topping

  • 2 packs Lotus Biscoff cookies (about 300g)
  • ½ cup unsalted butter, melted
  • Crushed Biscoff cookies for garnish
  • ½ cup Biscoff cookie butter (melted slightly for drizzle)

Cream Filling

  • 2 ½ cups heavy cream, chilled
  • 1 cup cream cheese (softened)
  • ½ cup powdered sugar
  • 1 tsp vanilla extract

Instructions

  1. Prepare the Crust: Crush half of the Biscoff cookies into fine crumbs and mix them with melted unsalted butter until the mixture resembles sandy crumbs. Press this mixture firmly into the bottom of a greased or lined 9×9-inch dish and chill it in the refrigerator for 15 minutes to set.
  2. Whip the Cream: Beat the chilled heavy cream in a mixing bowl until soft peaks form, ensuring it is light and airy but not overwhipped.
  3. Make Cream Cheese Mixture: In another bowl, combine softened cream cheese, powdered sugar, and vanilla extract. Mix until smooth and creamy, ensuring no lumps remain for a silky texture.
  4. Fold Cream into Cream Cheese: Gently fold the whipped cream into the cream cheese mixture until fully combined and fluffy, taking care to keep the mixture light and airy.
  5. Assemble First Cream Layer: Spread half of the cream mixture evenly over the chilled cookie crust base in the dish.
  6. Add Cookie Layer: Place a layer of whole Lotus Biscoff cookies on top of the cream layer, arranging them closely to cover the surface completely.
  7. Spread Remaining Cream: Evenly spread the remaining cream mixture over the layer of whole cookies, smoothing it out gently.
  8. Top with Crushed Cookies: Sprinkle the top with the remaining crushed Biscoff cookies to add texture and crunch.
  9. Drizzle with Cookie Butter: Warm the Biscoff cookie butter slightly to make it drizzly and then generously drizzle it over the top of the dessert.
  10. Final Garnish and Chill: Add extra crushed cookie crumbs for additional crunch and texture on the top, then refrigerate the entire dish for at least 4–6 hours or preferably overnight so the layers set firmly.
  11. Serve: Once set, slice into squares and serve chilled. Enjoy your creamy, crunchy, no-bake Biscoff dessert!

Notes

  • Use a 9×9-inch dish for optimal layering and portion size.
  • Ensure the heavy cream is well chilled for the best whipping results.
  • Softened cream cheese should be at room temperature to avoid lumps in the cream mixture.
  • For an intensified Biscoff flavor, slightly warm the cookie butter before drizzling.
  • This dessert needs to chill for several hours to firm up properly, so prepare in advance.
  • Store leftovers covered in the refrigerator for up to 3 days.
