Ingredients

Scale

Noodles

  • 10 ounces rice noodles

Beef Mixture

  • 1 pound ground beef (80/20)
  • 1 teaspoon fresh ginger, finely minced
  • 4 garlic cloves, finely minced

Sauce

  • ½ cup low-sodium soy sauce
  • 2 tablespoons dark soy sauce
  • ½ cup water
  • ¼ cup brown sugar
  • 3 tablespoons cornstarch

Garnish

  • Green onions, sliced
  • White sesame seeds

Instructions

  1. Prepare the sauce: In a bowl, whisk together the low-sodium soy sauce, dark soy sauce, water, brown sugar, and cornstarch until fully combined and set aside.
  2. Cook the noodles: Prepare the rice noodles according to the package instructions. Once cooked, drain and set them aside.
  3. Cook the beef: Heat a small amount of cooking oil in a large wok or skillet over medium-high heat. Add the ground beef and use a wooden spoon or spatula to break it into small pieces as it cooks. Continue cooking until most of the pink color is gone.
  4. Sauté the aromatics: Add the finely minced ginger and garlic to the beef. Stir and cook for about 2 to 3 minutes until fragrant.
  5. Add and thicken the sauce: Pour the prepared sauce over the cooked ground beef. Let the mixture simmer gently, stirring occasionally, for 3 to 4 minutes, allowing the sauce to thicken and coat the beef.
  6. Combine noodles and beef: Place the cooked rice noodles on top of the beef and sauce mixture. Toss everything together carefully to thoroughly incorporate the noodles and ensure they are evenly coated in the sauce.
  7. Garnish and serve: Sprinkle sliced green onions and white sesame seeds over the top for a fresh and nutty finish. Serve immediately.

Notes

  • Use low-sodium soy sauce to control the saltiness of the dish.
  • Adjust brown sugar according to desired sweetness.
  • Be careful not to overcook the noodles; slightly undercooked noodles will finish cooking as they mix with the hot beef.
  • Ground beef with 80/20 fat content provides juiciness and flavor.
  • Can be served with steamed vegetables for a balanced meal.
  • Optionally, for extra heat, add chili flakes or sliced fresh chilies when cooking garlic and ginger.
