Ingredients

Scale

Potatoes and Seasoning

  • 2 Baking Potatoes
  • Salt and Pepper, to taste
  • Olive Oil, a few tablespoons for rubbing
  • Butter, for optional filling

Filling

  • 2 tablespoons bacon bits
  • 1/4 cup diced carrots, steamed or boiled
  • 1/4 cup chopped broccoli, steamed or boiled
  • 6 ounces shredded cheese
  • 1/2 cup diced chicken or diced steak, cooked

Instructions

  1. Prepare Potatoes: Prick each potato several times with a fork to allow steam to escape during cooking. Rub each potato evenly with a few tablespoons of olive oil to ensure a crispy skin.
  2. Season Potatoes: Sprinkle the potatoes with salt and pepper for flavor. Place the potatoes on a microwave-safe plate for cooking.
  3. Microwave Potatoes: Cook the potatoes in the microwave on high power for 4-6 minutes. Flip each potato over and microwave for an additional 4 minutes.
  4. Check for Doneness: Test the softness by pressing or piercing the middle of the potatoes. If they are still slightly firm, microwave in 1-minute increments until fully soft throughout.
  5. Preheat Broiler: Turn on the oven broiler to high to prepare for melting the cheese later.
  6. Slice and Open: Slice the top lengthwise down the center of the potato. Gently squeeze or push the sides inward to open the potato, being careful as it will be hot.
  7. Add Butter (Optional): Add a small amount of butter inside the opened potato for extra richness if desired.
  8. Fill Potatoes: Stuff the opened potatoes with diced cooked chicken (or steak) and the steamed carrots and broccoli. Sprinkle the filling generously with shredded cheese and top with bacon bits.
  9. Broil to Melt Cheese: Place the stuffed potatoes under the preheated broiler for 30-45 seconds or until the cheese melts and starts to bubble. Serve immediately while hot.

Notes

  • You can substitute the chicken with diced steak or leave out meat for a vegetarian option using extra vegetables.
  • Steamed or boiled vegetables like carrots and broccoli should be tender but not mushy before adding to the potatoes.
  • If you prefer crispy bacon, you can cook fresh bacon instead of using bacon bits.
  • Adjust the cheese amount to your liking or try different cheese varieties such as cheddar, mozzarella, or pepper jack.
  • Microwave times may vary depending on potato size and microwave wattage; always check for softness before proceeding.
