Instructions

  1. Preheat Oven: Arrange a rack in the middle position of your oven and preheat to 425°F (220°C). Set aside an unlined baking sheet for baking the potatoes.
  2. Prepare Potatoes: Place each potato individually between two chopsticks or wooden skewers. This setup prevents slicing all the way through the potato.
  3. Slice Potatoes: Using a sharp knife, make vertical slits about 1/8 inch apart, cutting straight down until the knife hits the chopsticks, leaving the bottom of the potato intact. Repeat for each potato.
  4. Brush with Butter: Using a basting brush, coat about half of the melted butter all over the potatoes, making sure to brush inside the slits for flavor and moisture.
  5. Season: Sprinkle kosher salt and black pepper evenly over the potatoes, adjusting to taste.
  6. Bake Initial Phase: Place the potatoes on the unlined baking sheet and bake in the preheated oven for 30 minutes.
  7. Separate Slices & Butter: After 30 minutes, carefully use a knife to gently pull apart the potato slices to fan them out. Brush the remaining melted butter over the potatoes, including the newly exposed edges.
  8. Bake Final Phase: Return the potatoes to the oven and bake for an additional 30-35 minutes or until they are crispy on the outside and tender inside. Cooking time may vary based on potato size.
