4.8 from 67 reviews

A hearty and flavorful grilled cheese burrito combining seasoned ground beef, rice, creamy cheeses, and zesty sauces wrapped in a warm flour tortilla, then grilled to a crispy, cheesy perfection.

Ingredients

Scale

Meat and Seasoning

  • 1 lb ground beef
  • 1 packet taco seasoning (or homemade blend)

Base and Sauces

  • 1 cup cooked white rice
  • 1/2 cup sour cream
  • 1/2 cup nacho cheese sauce
  • 1/4 cup chipotle sauce

Cheeses

  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese

Wrap and Cooking

  • 4 large flour tortillas
  • Butter or oil for grilling

Instructions

  1. Cook the Beef: In a skillet over medium heat, brown the ground beef until fully cooked, about 8 to 10 minutes. Drain any excess grease, then add the taco seasoning along with 1/4 cup of water. Reduce heat and simmer for 5 minutes to let the flavors meld.
  2. Warm the Tortillas: Heat the flour tortillas on a dry skillet or briefly in the microwave to make them pliable and easy to fold without cracking.
  3. Assemble the Burrito: Lay a warmed tortilla flat and layer with a scoop of cooked white rice, the seasoned ground beef, nacho cheese sauce, a drizzle of chipotle sauce, and sour cream. Finish by sprinkling a mix of shredded cheddar and mozzarella cheese on top.
  4. Grill the Burrito: Heat a clean skillet over medium heat and sprinkle about 2 tablespoons of shredded cheese directly onto the pan. Place the assembled burrito seam-side down on the cheese and cook until the cheese melts and forms a crispy crust, approximately 3 to 4 minutes. Carefully flip the burrito and repeat the process on the other side until golden and crispy with melted cheese crust.

Notes

  • Use softened butter or a light coating of oil to prevent sticking and add flavor while grilling.
  • Feel free to add additional veggies like diced tomatoes, onions, or jalapeños inside the burrito for extra texture and flavor.
  • Taco seasoning can be substituted with homemade seasoning blends to control sodium and spice levels.
  • Make sure the tortillas are warm before assembling to avoid cracking when folding.
  • Use freshly shredded cheese rather than pre-shredded for better melting quality and flavor.
