Ingredients

Scale

Bottom Layer:

  • 1 Pillsbury Gluten-Free Yellow Cake Mix
  • 1/2 cup butter, melted
  • 2 eggs

Top Layer:

  • 1 (8 oz) block cream cheese, softened
  • 2 eggs
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat Oven: Preheat your oven to 350ºF (175ºC) to prepare for baking the cake evenly.
  2. Prepare Baking Dish: Lightly grease a 9×13 inch baking dish to prevent sticking and set it aside.
  3. Make Bottom Layer: In a large bowl, thoroughly mix the gluten-free yellow cake mix, melted butter, and 2 eggs until fully combined and smooth.
  4. Prepare Top Layer: In a separate large bowl, beat together the softened cream cheese, 2 eggs, powdered sugar, and vanilla extract until the mixture is smooth and creamy without lumps.
  5. Assemble Cake: Press the cake mix evenly into the prepared baking dish to form the bottom layer. Then, gently pour and spread the cream cheese mixture evenly over the top of the cake layer.
  6. Bake: Place the assembled dish in the center of the oven and bake for 35-40 minutes. The cake is done when the top no longer jiggles when you move the pan — the toothpick test is not effective for this particular cake.
  7. Cool: Remove the cake from the oven and allow it to cool completely on a wire rack to set the layers properly.
  8. Serve and Store: Once cooled, cut the cake into squares and serve. Store any leftovers in the refrigerator for up to one week to maintain freshness.

Notes

  • The toothpick test is not reliable for this cake due to its dense cream cheese topping; rely on the jiggle test instead.
  • Ensure the cream cheese is fully softened for easier mixing and a smoother top layer.
  • Use a gluten-free cake mix to keep the recipe suitable for gluten-sensitive individuals.
  • Store leftovers in an airtight container in the refrigerator to prevent drying out.
  • This cake can be served chilled or at room temperature depending on your preference.
