Potatoes

  • 1 ½ lbs baby potatoes, halved or quartered if large
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tsp Italian seasoning
  • ½ tsp paprika
  • ½ tsp salt
  • ½ tsp black pepper
  • ¼ cup grated Parmesan cheese

Instructions

  1. Preheat Oven: Heat your oven to 400°F (200°C). Lightly grease a large baking dish or sheet pan to prevent sticking.
  2. Prep Potatoes: In a mixing bowl, toss the halved or quartered baby potatoes with 2 tablespoons of olive oil, half of the minced garlic, Italian seasoning, paprika, salt, and black pepper to coat evenly. Spread them out evenly on one side of the prepared baking dish.
  3. Prep Chicken: Drizzle the chicken breasts with the remaining 1 tablespoon of olive oil. Rub the chicken with the rest of the minced garlic, a pinch of salt and black pepper, and half of the grated Parmesan cheese. Arrange the chicken on the other side of the baking dish.
  4. Bake: Roast the chicken and potatoes in the preheated oven for 30 to 35 minutes. Flip the potatoes halfway through cooking to ensure even browning. The chicken is done when it reaches an internal temperature of 165°F (74°C) and the potatoes are golden and tender.
  5. Finish: Once out of the oven, brush the chicken and potatoes with the melted butter and sprinkle them with the remaining Parmesan cheese for extra flavor and richness.
