Ingredients

Scale

Beef Filling

  • 1 lb (450 g) ground beef
  • 1 tablespoon olive oil
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup shredded cheddar cheese (or mozzarella/colby mix)

Dough

  • 1 can (16 oz / 450 g) refrigerated biscuit dough (8 large biscuits) or equivalent homemade dough

Garlic Butter Topping

  • ¼ cup unsalted butter, melted
  • 2 tablespoons grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon dried parsley (optional, for garnish)

Instructions

  1. Prepare Beef Filling: Heat olive oil in a skillet over medium heat. Add the finely diced onion and cook until softened, about 3 minutes. Stir in minced garlic and cook for an additional 30 seconds to release its aroma.
  2. Cook Ground Beef: Add ground beef to the skillet along with salt, black pepper, and Worcestershire sauce. Cook until the beef is browned and no longer pink, breaking it apart with a spoon for even cooking. Drain off any excess grease. Remove from heat and stir in shredded cheddar cheese until it melts and combines with the beef mixture. Allow the filling to cool slightly to make assembly easier.
  3. Preheat Oven and Prepare Baking Sheet: Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper to prevent sticking and ensure even baking.
  4. Assemble the Cheeseburger Bombs: Flatten each biscuit dough piece into a circle approximately 4–5 inches wide. Place about 2 tablespoons of the beef and cheese mixture in the center of each dough circle. Fold the dough over the filling and pinch the edges tightly to seal, forming a ball. Place each sealed bomb seam-side down on the prepared baking sheet.
  5. Prepare Garlic Butter Topping: In a small bowl, combine melted unsalted butter, grated Parmesan cheese, garlic powder, and dried parsley if using. Stir the mixture thoroughly.
  6. Brush and Bake: Generously brush the garlic butter mixture over the surface of each bomb to add flavor and aid browning. Bake the bombs in the preheated oven for 15–18 minutes, or until they are puffed up and golden brown.
  7. Finish and Serve: Optionally brush the bombs with extra garlic butter immediately after baking for added richness. Serve warm with a side of marinara sauce, ranch dressing, or your preferred dipping sauce for a deliciously comforting treat.

Notes

  • You can substitute cheddar with mozzarella or a colby cheese mix for variation in flavor and meltiness.
  • Make sure to pinch the dough edges firmly to avoid bursting during baking.
  • For a spicier kick, add some diced jalapeños or a pinch of chili flakes to the beef mixture.
  • These bombs are best enjoyed fresh but can be stored in an airtight container in the fridge for up to 2 days and reheated before serving.
  • Homemade biscuit dough can be used as a substitute if preferred for a fresher, customizable dough option.
