Ingredients

Scale

Steak Bites

  • 1 lb (450g) sirloin or ribeye steak, cut into bite-sized cubes
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 3 tablespoons unsalted butter
  • Salt and pepper to taste
  • Optional: chopped fresh parsley for garnish

Parmesan Cream Sauce

  • 1 tablespoon unsalted butter
  • 2 cloves garlic, finely minced
  • 1 cup heavy cream
  • ½ cup freshly grated Parmesan cheese
  • Salt and black pepper to taste
  • Optional: pinch of red pepper flakes

Instructions

  1. Prep the steak: Pat your steak cubes dry using paper towels to remove excess moisture, then season them generously with salt and pepper to enhance the flavor during cooking.
  2. Sear the steak: Heat olive oil in a large skillet over medium-high heat. Add the steak cubes in batches to avoid overcrowding, searing each side for 2–3 minutes until browned and caramelized. Remove the steak from the pan and set aside.
  3. Make the garlic butter: Reduce heat to medium, and in the same skillet, melt the butter. Add the minced garlic and sauté for about 30 seconds until fragrant without burning. Return the steak bites to the skillet, tossing them well in the garlic butter to coat evenly.
  4. Prepare the Parmesan cream sauce: In a separate saucepan, melt butter over medium heat. Add finely minced garlic and sauté for 30 seconds until aromatic. Pour in the heavy cream and bring it to a gentle simmer. Stir in the freshly grated Parmesan cheese until the sauce is smooth and creamy. Season with salt, pepper, and optional red pepper flakes to taste.
  5. Serve: Pour the rich Parmesan cream sauce over the garlic butter-coated steak bites or serve it on the side for dipping. Garnish with chopped fresh parsley for a burst of color and freshness. Serve immediately while hot.

Notes

  • Use a high-quality, well-marbled steak such as sirloin or ribeye for the best flavor and tenderness.
  • Make sure to dry the steak well before seasoning to achieve a better sear.
  • The steak can be cooked in batches to prevent steaming and to keep the pieces nicely browned.
  • For a spicier kick, add red pepper flakes to the Parmesan cream sauce.
  • This dish pairs excellently with crusty bread, mashed potatoes, or steamed vegetables.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 2 days.
