Instructions

  1. Prepare the chicken: In a large bowl, toss the bite-sized chicken pieces with olive oil. Add the flour, Italian seasoning, salt, and black pepper, stirring until the chicken is evenly coated.
  2. Heat the skillet and melt butter: Place a large skillet over medium heat and melt 3 tablespoons of the butter, swirling it to coat the pan evenly.
  3. Cook the chicken first side: Arrange the chicken pieces in the skillet spaced apart. Avoid moving them until they are nearly cooked through, about 3 minutes.
  4. Flip and finish cooking chicken: Turn the chicken pieces and cook for an additional 2 minutes, or until the internal temperature reaches 165°F.
