Instructions

  1. Marinate the Lamb Chops: Season both sides of the lamb chops generously with kosher salt and black pepper.   2. Sear the Surface: Heat a large 12-inch cast iron skillet or frying pan over medium-high heat. Add the remaining 2 tablespoons of olive oil and heat until shimmering. Place the marinated lamb chops in the hot skillet and sear them without moving until a deep golden-brown crust forms, about 2 to 3 minutes per side.
  3. Check For Doneness: Flip the lamb chops and continue cooking until the internal temperature reaches 125°F (51°C) for medium-rare or 135°F (57°C) for medium doneness. This should take approximately 3 to 4 minutes. Use a reliable meat thermometer for accuracy.
