Instructions

  1. Prepare Crust: In a medium bowl, combine graham cracker crumbs and melted butter. Mix well until crumbs are fully coated. Press mixture evenly into the bottom of a greased 9×13 inch pan. Chill in the refrigerator while preparing the next layers to set.
  2. Create Cream Cheese Layer: Using a mixer, beat softened cream cheese and powdered sugar together until smooth and creamy. Gently fold in 8 ounces of whipped topping until fully incorporated and light. Spread this mixture evenly over the chilled crust layer.
  3. Make Pumpkin Pudding Layer: In a separate bowl, whisk together pumpkin puree, instant vanilla pudding mixes, cold milk, and pumpkin pie spice. Whisk vigorously until the mixture thickens, which usually takes a couple of minutes. Spread this thick pumpkin pudding layer evenly over the cream cheese layer.
  4. Add Whipped Topping: Spread the remaining 8 ounces of whipped topping evenly over the pumpkin pudding layer, smoothing the surface with a spatula for an attractive finish.
