  • 1 pound ground beef or ground turkey
  • 3 tablespoons taco seasoning or 1 packet of taco seasoning
  • 3/4 cup water
  • 1 large head of iceberg lettuce or romaine lettuce, chopped
  • 1/2 green bell pepper, chopped
  • 1/2 cup chopped black olives
  • 1 cup halved grape or cherry tomatoes
  • 1 can (15.25 ounces) corn, drained
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 cup shredded cheddar cheese or Monterey Jack cheese
  • 2 cups crushed nacho cheese Doritos

Instructions

  1. Prepare the dressing: In a mason jar, combine red wine vinegar, olive oil, ketchup, honey, Worcestershire Sauce, paprika, onion powder, and garlic powder. Shake well to blend all ingredients thoroughly. Cover and refrigerate until ready to use to allow flavors to meld.
  2. Cook the meat: Heat a large skillet over medium-high heat. Add the ground beef and cook, stirring occasionally, until browned and fully cooked through. Drain any excess grease from the skillet. Stir in taco seasoning and water. Reduce heat to simmer and cook for 5-7 minutes, allowing the meat to absorb seasoning and thicken slightly. Remove from heat and let cool for 10-15 minutes before assembling the salad.
  3. Assemble the salad base: In a large salad bowl, add chopped iceberg or romaine lettuce. Layer with green bell pepper, black olives, halved tomatoes, drained corn, rinsed black beans, shredded cheese, and the cooled seasoned meat mixture.
  4. Add chips and dressing: Just before serving, sprinkle the crushed nacho cheese Doritos over the top. Drizzle with desired amount of prepared dressing. Toss gently to coat all ingredients evenly and serve immediately to enjoy the crunchy texture.
