Ingredients

Scale

Sausage

  • 1 package (14 oz) smoked sausage

Vegetables

  • 3 cups thinly sliced Yukon gold potatoes
  • 2 cups thinly sliced carrots (34 large)
  • 1 large yellow onion, thinly sliced

Seasonings & Fats

  • 2 tablespoons olive oil
  • 1 teaspoon Italian seasoning
  • 1 teaspoon dried basil
  • 1 teaspoon dried parsley
  • ½ teaspoon garlic powder
  • 1 teaspoon paprika
  • ¼ teaspoon dried thyme
  • Salt and pepper to taste
  • 4 tablespoons unsalted butter (cut into tablespoons)

Instructions

  1. Preheat the Grill or Oven: Preheat your grill to medium-high heat or your oven to 400°F (200°C) to ensure the cooking temperature is ready for the foil packets.
  2. Prepare the Vegetables: In a large mixing bowl, combine the thinly sliced potatoes, carrots, and onions. Drizzle with olive oil and season with Italian seasoning, dried basil, dried parsley, garlic powder, paprika, dried thyme, salt, and pepper. Toss thoroughly until all vegetables are evenly coated with the seasoning mixture.
  3. Assemble Foil Packets: Cut four large sheets of heavy-duty foil. Evenly distribute the seasoned vegetable mixture in the center of each sheet. Slice the smoked sausage and arrange it over the vegetables in each packet. Top each with 1 tablespoon of unsalted butter.
  4. Seal the Packets: Fold the foil over the ingredients and seal the edges tightly to form packets. This sealing traps steam inside, which helps cook the contents evenly and retain flavors.
  5. Cook the Packets: Place the foil packets on the grill or on a baking sheet if using the oven. Cook for 25-30 minutes. If grilling, turn the packets halfway through cooking to ensure even heat distribution. Cook until potatoes and carrots are tender and sausage is heated through.
  6. Serve and Enjoy: Carefully open the foil packets, mindful of escaping steam, and serve your hot, flavorful Hobo Foil Packets immediately for a satisfying meal.

Notes

  • You can substitute smoked sausage with your preferred type of sausage or even use plant-based sausage for a vegetarian option.
  • Heavy-duty foil is recommended to prevent punctures and leaks while cooking.
  • Adjust seasoning according to your taste; add extra garlic powder or chili flakes for more kick.
  • Leftover packets can be stored in the refrigerator and reheated in the oven wrapped in foil.
  • For grilling, make sure to use indirect heat to avoid burning the foil packets.
