Caramel Base

  • 1 cup Medjool Dates (pitted)

Chocolate Coating

  • 1 cup Chocolate Chips (or chocolate bar, use dark chocolate for richer flavor)
  • 2 teaspoons Coconut Oil

Instructions

  1. Soak Dates: Start by soaking 1 cup of pitted Medjool dates in hot water for about 10 minutes to soften them for easier blending.
  2. Blend Together: Drain the soaked dates and add to a blender along with 2 tablespoons of almond butter and 1 tablespoon of melted coconut oil. Blend the mixture until completely smooth and creamy to form the caramel base.
  3. Set the Caramel: Transfer the smooth date caramel mixture to a loaf pan lined with parchment paper (9×5 inch) and spread evenly. Freeze the mixture for 2 to 3 hours until it is firm enough to slice.
  4. Slice the Caramels: Once firm, remove the caramel block from the pan and slice into 12 equal squares.
  5. Melt the Chocolate: In a microwave-safe bowl, melt 1 cup of chocolate chips along with 2 teaspoons of coconut oil in short bursts, stirring in between until smooth.
  6. Coat the Caramels: Dip each caramel square into the melted chocolate, ensuring they are fully coated, then place them on a lined plate or tray.
  7. Set the Chocolate: Refrigerate the chocolate-coated caramels for about 1 hour until the chocolate hardens and sets completely before serving.
