This Coffee Cake Cheesecake recipe combines the best of two beloved desserts: a creamy, rich cheesecake layered with a cinnamon-swirled filling and topped with a buttery streusel crumb topping, all resting on a crispy graham cracker crust. Perfect for coffee breaks or special occasions, this dessert offers a delightful balance of sweet, cinnamon, and cocoa flavors in every bite.

Ingredients

Scale

Graham Cracker Crust

  • 2 cups (210g) graham cracker crumbs
  • 2 tablespoons granulated sugar
  • 1 teaspoon ground cinnamon
  • ½ cup (1 stick / 115g) unsalted butter, melted and cooled slightly

Cinnamon Swirl

  • ½ cup (100g) packed brown sugar (light or dark)
  • 1 teaspoon ground cinnamon
  • 2 teaspoons unsweetened cocoa powder

Streusel Topping

  • ¾ cup (90g) all-purpose flour, spooned and leveled
  • ½ cup (100g) packed brown sugar (light or dark)
  • 1 teaspoon ground cinnamon
  • ¼ cup (60g) unsalted butter, melted and cooled slightly

Cheesecake Filling

  • 4 (8oz) blocks cream cheese (32oz / 900g total), at room temperature
  • ¾ cup (150g) granulated sugar
  • ½ cup (120g) sour cream, at room temperature
  • ¼ cup (30g) all-purpose flour, spooned and leveled
  • ½ teaspoon salt
  • 2 teaspoons pure vanilla extract
  • 4 large eggs, at room temperature

Icing

  • ½ cup (70g) powdered sugar
  • 1 to 2 tablespoons milk

Instructions

  1. Preheat Oven: Preheat your oven to 325°F (163°C) to ensure it reaches the correct temperature by the time you’re ready to bake.
  2. Make Graham Cracker Crust: In a medium bowl, combine graham cracker crumbs, granulated sugar, and ground cinnamon. Add the melted butter and mix thoroughly until the crumbs are evenly moistened. Press this mixture into the bottom and halfway up the sides of a 9-inch springform pan to form the crust layer.
  3. Bake Crust: Bake the crust in the preheated oven for 8 minutes until set. Remove from the oven and allow it to cool slightly while preparing the other components.
  4. Prepare Cinnamon Swirl: In a small bowl, mix together brown sugar, ground cinnamon, and cocoa powder. Set this aside; it will be used to create the flavorful swirl within the cheesecake.
  5. Make Streusel Topping: In a medium bowl, combine the flour, brown sugar, and ground cinnamon. Add the melted butter and stir until the mixture becomes crumbly. Set aside for later use as the crunchy topping.
  6. Prepare Cheesecake Filling: Using a mixer, beat the cream cheese and granulated sugar together until smooth and creamy. Add sour cream, flour, salt, and vanilla extract, mixing until fully combined. Add the eggs one at a time, mixing gently after each addition to maintain a smooth texture and avoid overmixing.
  7. Assemble Cheesecake: Pour half of the cheesecake filling over the cooled graham cracker crust. Evenly sprinkle the cinnamon swirl mixture over the filling. Carefully spoon the remaining cheesecake filling on top, spreading it evenly. Use a skewer or knife to gently swirl the cinnamon mixture through the cheesecake layers. Finally, sprinkle the streusel topping evenly over the entire surface.
  8. Bake Cheesecake: Bake the assembled cheesecake for 70 minutes. Then, remove the water-filled pan used for the water bath. Continue baking for an additional 20 to 30 minutes, or until the edges are set and the center jiggles slightly when gently shaken.
  9. Cool Cheesecake: Turn off the oven and leave the cheesecake inside with the door slightly ajar for 2 hours. Afterward, transfer it to room temperature until completely cooled. Refrigerate the cheesecake for at least 4 hours to allow it to fully set.
  10. Prepare and Drizzle Icing: Whisk together powdered sugar and milk until smooth to create the icing. Drizzle this over the cooled cheesecake just before serving for a sweet finishing touch.

Notes

  • Room temperature ingredients ensure a smooth, lump-free cheesecake batter.
  • Using a water bath while baking helps prevent cracks in the cheesecake.
  • The cinnamon swirl adds a rich depth of flavor that complements the creamy cheesecake.
  • For best results, chill the cheesecake overnight before serving.
  • You can adjust the amount of milk in the icing to achieve your desired drizzle consistency.
  • Ensure not to overmix the batter after adding eggs to keep the cheesecake dense and creamy.
