Ingredients

Scale

Dry Ingredients

  • 1/2 cup Rolled Oats, blended into powder (50g)
  • 1 cup Almond Flour (96g)
  • 2 tbsp Ground Flaxseed (14g)
  • 1/4 cup Vanilla Protein Powder (30g)
  • 1 tsp Cinnamon (5g)
  • 1/4 tsp Nutmeg (1g)
  • 2 tbsp Powdered Sugar (16g) for coating
  • 3 tbsp Powdered Sugar (24g) for glaze

Wet Ingredients

  • 1/4 cup Almond Butter (60g)
  • 2 tbsp Maple Syrup (30ml)
  • 1/4 cup Unsweetened Almond Milk (60ml) plus 12 tsp (5-10ml) for glaze
  • 2 tbsp Cream Cheese or Dairy-free Alternative (30g)
  • 1 tbsp Cinnamon (5g) for coating

Instructions

  1. Prepare the Dough: Blend rolled oats into a fine powder. In a large bowl, combine the powdered oats, almond flour, ground flaxseed, vanilla protein powder, cinnamon, and nutmeg thoroughly to ensure even distribution of spices and dry ingredients.
  2. Combine Wet and Dry Ingredients: Add almond butter and maple syrup to the dry mix. Stir the ingredients together until the mixture breaks into a crumbly texture.
  3. Add Almond Milk: Gradually add unsweetened almond milk one tablespoon at a time. Mix continuously until a sticky but firm dough forms. Adjust the consistency by adding more almond flour if too wet or more almond milk if too dry.
  4. Form and Coat Bites: Roll the dough into 1-inch balls. In a small bowl, mix powdered sugar and cinnamon to create the coating. Roll each bite thoroughly in the cinnamon-sugar mixture to evenly coat all sides.
  5. Chill: Place the coated bites on parchment paper-lined tray or plate. Refrigerate for at least 30 minutes to allow the bites to firm up and hold their shape.
  6. Prepare Glaze: In a small bowl, whisk together cream cheese (or dairy-free alternative), powdered sugar, and 1 teaspoon of almond milk. Add more almond milk 1 teaspoon at a time until the glaze reaches a smooth, drizzle-able consistency.
  7. Decorate and Serve: Drizzle the glaze over the chilled protein bites using a spoon or piping tool. Serve immediately or store in the refrigerator for up to 5 days for a quick and tasty snack.

Notes

  • Use a dairy-free cream cheese alternative for a vegan or dairy-free option.
  • Adjust sweetness by varying the amount of maple syrup or powdered sugar according to taste.
  • Protein powder can be swapped with plant-based or whey depending on dietary preferences.
  • Store bites in an airtight container in the fridge to maintain freshness.
  • These bites make an excellent pre- or post-workout snack.
