Ingredients

Scale

Chili

  • ¼ large onion, diced
  • 1 pound ground beef
  • 15 ounces tomato sauce
  • 1 tablespoon tomato paste
  • 7.5 ounces petite diced tomatoes
  • 2 ounces green chilies
  • ¼ cup water (use tomato sauce can to measure)
  • 1 tablespoon ground cumin
  • 1 tablespoon onion powder
  • 1 tablespoon garlic powder
  • 1 tablespoon chili powder
  • 1 teaspoon salt

Cheese Sauce

  • 1½ cups heavy whipping cream
  • 3 cups extra-sharp cheddar cheese, shredded (about one 8-ounce block)
  • 2 cups shredded pepper jack cheese (about ¼ of a 2-pound block)
  • ¼ teaspoon salt
  • ¼ teaspoon onion powder
  • ¼ teaspoon garlic powder
  • ¼ teaspoon chili powder

Other

  • 1 bag frozen French fries
  • Jalapeños, sliced (for garnish)
  • Green onions, chopped (for garnish)

Instructions

  1. Prepare French Fries: Cook the frozen French fries according to the package instructions until crispy and golden brown. Set aside and keep warm.
  2. Cook the Chili: In a skillet over medium heat, sauté the diced onion until translucent, about 3-4 minutes. Add the ground beef and cook until no pink remains, breaking it up as it cooks. Drain excess fat from the skillet.
  3. Simmer the Chili Mixture: Stir in the tomato sauce, tomato paste, diced tomatoes, green chilies, water, cumin, onion powder, garlic powder, chili powder, and salt. Mix well and reduce heat to low. Let simmer for 3 to 5 minutes to meld flavors while you prepare the cheese sauce.
  4. Make the Cheese Sauce: In a medium saucepan over medium heat, warm the heavy whipping cream until bubbles form around the edges, but do not boil. Lower heat and gradually add the shredded cheddar and pepper jack cheeses along with salt, onion powder, garlic powder, and chili powder. Stir constantly until the cheese is fully melted and the sauce is smooth.
  5. Assemble the Chili Cheese Fries: On serving plates, spread a layer of cheese sauce as a base. Pile hot French fries on top, add a little more cheese sauce, then spoon over the chili mixture. Finish with an additional drizzle of cheese sauce. Garnish with sliced jalapeños and chopped green onions for a fresh, spicy kick.

Notes

  • You can adjust the level of spiciness by adding more or fewer green chilies and jalapeños.
  • For a healthier option, use reduced-fat cheese and ground turkey instead of beef.
  • Make sure not to boil the cream when preparing the cheese sauce to prevent curdling.
  • Use fresh shredded cheese instead of pre-shredded for a creamier sauce.
  • This dish is best served immediately to keep fries crisp and cheese sauce creamy.
