Ingredients

Scale

Chicken

  • 4 boneless, skinless chicken breasts

Rice Mixture

  • 1 cup long-grain rice
  • 1 can (10.5 oz) cream of mushroom soup
  • 2 cups low-sodium chicken broth
  • 2 cups frozen mixed vegetables
  • 1 tsp onion powder
  • 1 tsp garlic powder

Topping

  • 1 cup shredded cheddar cheese
  • Salt and pepper to taste
  • Nonstick cooking spray (for greasing the baking dish)

Instructions

  1. Preheat Oven and Prepare Dish: Preheat your oven to 350°F (175°C) and grease a baking dish with nonstick spray to prevent sticking.
  2. Season Chicken: Season the boneless, skinless chicken breasts with salt and pepper on both sides. Place the chicken breasts evenly in the greased baking dish.
  3. Mix Rice and Vegetables: In a large bowl, combine the long-grain rice, cream of mushroom soup, low-sodium chicken broth, frozen mixed vegetables, onion powder, and garlic powder. Stir thoroughly to ensure all ingredients are well incorporated.
  4. Assemble Casserole: Pour the rice and vegetable mixture over the chicken breasts in the baking dish, spreading it evenly so that the chicken is completely covered by the mixture.
  5. Add Cheese Topping: Sprinkle the shredded cheddar cheese evenly over the top of the combined chicken and rice mixture.
  6. Bake: Cover the baking dish tightly with aluminum foil to trap moisture and bake in the preheated oven for 45 to 50 minutes, or until the chicken is fully cooked through and the rice is tender.
  7. Rest and Serve: Remove the casserole from the oven and let it rest, covered, for about 5 minutes before serving to allow the flavors to meld and the casserole to set slightly.

Notes

  • Make sure to cover the baking dish tightly with foil to prevent the rice from drying out during baking.
  • You can substitute cream of mushroom soup with cream of chicken soup if preferred.
  • For a lower-fat version, use reduced-fat cheddar cheese and low-fat cream soup options.
  • If fresh vegetables are available, chop and use an equivalent amount instead of frozen mixed vegetables.
  • Check chicken doneness with a meat thermometer; the internal temperature should reach 165°F (74°C).
