Ingredients

Scale

Chicken

  • 3 lbs boneless, skinless chicken thighs, trimmed

Sauce

  • 1 cup light brown sugar
  • 1 cup soy sauce
  • ⅓ cup bourbon whiskey
  • 2 tablespoons apple cider vinegar
  • ½ teaspoon ground ginger
  • 1 tablespoon honey
  • ½ teaspoon red pepper flakes
  • 4 cloves garlic, minced

Thickening

  • 3 tablespoons cornstarch
  • 2 tablespoons water

Garnish

  • ¼ cup chopped green onions

Instructions

  1. Prepare chicken and slow cooker: Begin by trimming any excess fat from the boneless, skinless chicken thighs and placing them at the bottom of your slow cooker.
  2. Combine sauce ingredients: In a separate bowl, whisk together light brown sugar, soy sauce, bourbon whiskey, apple cider vinegar, ground ginger, honey, red pepper flakes, and minced garlic until well blended.
  3. Add sauce to slow cooker: Pour the sauce mixture evenly over the chicken thighs in the slow cooker, ensuring all pieces are coated.
  4. Cook chicken: Cover and cook on high for 4 hours or low for 6 hours, until the chicken is fully cooked through and tender enough to shred.
  5. Shred chicken: Remove the cooked chicken from the slow cooker and shred or chop it to your preferred texture using two forks or knives.
  6. Thicken the sauce: In a small bowl, mix the cornstarch and water to create a smooth slurry, then stir this into the sauce remaining in the slow cooker.
  7. Combine chicken and sauce: Return the shredded chicken to the slow cooker and stir well to coat with the thickened sauce. Let it cook for an additional 5 to 10 minutes to allow the sauce to thicken and flavors to meld.
  8. Garnish and serve: Turn off the slow cooker heat, garnish the Bourbon Chicken with chopped green onions, and serve over white rice, brown rice, or cauliflower rice for a low-carb alternative.

Notes

  • For a spicier dish, increase the red pepper flakes according to taste.
  • Use chicken breasts if preferred, but thighs provide juicier, more tender results.
  • Bourbon adds a deep, rich flavor; substitute with whiskey if bourbon is unavailable.
  • Make sure to shred the chicken well to maximize sauce absorption.
  • Serve with steamed vegetables or a fresh salad for a balanced meal.
  • Leftovers keep well in the refrigerator for up to 3 days and freeze nicely for up to 2 months.
