Ingredients

Scale

Beef and Sauce

  • 1.5 Pound Beef Roast, cut into 1 inch pieces
  • 1 Tbsp Butter
  • 1/2 Onion, diced
  • 3 cups Beef Broth
  • 2 Bay Leaves
  • 1/2 tsp Dried Thyme Leaves
  • 1/2 tsp Salt
  • 1 tsp Pepper
  • 1 Tbsp Cornstarch
  • 1/4 cup Cold Water

Noodles

  • 12 oz Extra Wide Egg Noodles

Instructions

  1. Sauté Onions: Heat a large skillet over medium heat. Add the butter and diced onion, sautéing until the onion becomes translucent, about 3-4 minutes.
  2. Brown the Beef: Add the beef pieces to the skillet with the onions and brown them evenly over medium heat for 8-10 minutes.
  3. Simmer Beef in Broth: Pour 2 cups of beef broth into the skillet. Add bay leaves, dried thyme, salt, and pepper. Stir well to combine, bring to a boil, then reduce heat to low. Cover and simmer for 20-30 minutes until the beef is tender, gradually adding the remaining 1 cup of broth as the liquid reduces.
  4. Thicken Sauce: In a separate bowl, mix cornstarch with cold water to make a slurry. Stir this mixture into the skillet and cook for an additional 10 minutes until the sauce thickens.
  5. Cook Noodles: While the sauce thickens, cook the egg noodles in a separate pot according to package instructions until al dente. Drain well.
  6. Serve: Plate the cooked egg noodles and top with the beef tips and sauce. Serve immediately and enjoy your hearty meal.

Notes

  • For extra flavor, you can deglaze the skillet with a splash of red wine before adding the beef broth.
  • Adjust salt and pepper to taste depending on the saltiness of your broth.
  • Feel free to substitute beef broth with homemade stock for richer taste.
  • Extra wide egg noodles pair well as they hold the thick sauce nicely, but any wide pasta or buttered noodles work.
  • To make the dish gluten-free, use gluten-free noodles and cornstarch labeled gluten-free.
