Instructions

  1. Prepare the BBQ Chicken Mixture: In a bowl, combine 2 cups of cooked shredded chicken with 1/2 cup of barbecue sauce until the chicken is well coated and evenly mixed with the sauce.
  2. Heat the Skillet: Place a large skillet over medium heat and add 1 tablespoon of olive oil. Allow the oil to heat up before adding the tortillas.
  3. Assemble the Quesadilla: Lay one flour tortilla flat in the hot skillet. Sprinkle 1/2 cup of shredded cheddar cheese evenly over the tortilla, then spread 1/2 cup of the BBQ chicken mixture evenly on top of the cheese. Add another 1/2 cup of shredded cheddar cheese over the chicken, then cover it with a second tortilla.
  4. Cook First Side: Cook the assembled quesadilla for 3 to 4 minutes, or until the bottom tortilla turns golden brown and the cheese begins to melt.
  5. Flip and Cook Other Side: Carefully flip the quesadilla using a spatula, and cook an additional 3 to 4 minutes until the second side is golden and the cheese is fully melted inside.
