Ingredients

Scale

Sauce Ingredients

  • 1/3 cup avocado oil
  • Half an avocado
  • 1/4 cup orange juice
  • 1 tablespoon white vinegar
  • 1 clove garlic
  • 1/4 cup packed cilantro (leaves and stems)
  • 1/2 teaspoon coarse kosher salt
  • 1/4 cup mayo (optional for creaminess)

Bowl Ingredients

  • 2 sweet potatoes
  • 1 red onion
  • 2 tablespoons avocado oil
  • 2 tablespoons taco seasoning
  • Pinch of smoked paprika (optional)
  • Protein of choice (recommended: Amylu chicken meatballs or hot, roasty rotisserie chicken)

Instructions

  1. Preheat Oven: Preheat your oven to 425°F (220°C) to prepare for roasting the vegetables.
  2. Prepare Sweet Potatoes: Peel the sweet potatoes and cut them into wedges or your preferred shape. Place them on a large baking sheet and toss with 2 tablespoons of avocado oil, taco seasoning, and smoked paprika until evenly coated.
  3. Prepare Onions: Peel the red onion and cut it into thin wedges. Arrange the onion wedges on the baking sheet nestled among the sweet potatoes.
  4. Roast Vegetables: Transfer the baking sheet to the oven and roast for 35 minutes total. At around 20 minutes, flip the sweet potatoes and onions to ensure even cooking. If adding pre-cooked protein like meatballs, add them now to warm through during the remaining 15 minutes of baking.
  5. Make the Avocado Mojo Sauce: While the veggies roast, combine avocado oil, half an avocado, orange juice, white vinegar, garlic, cilantro, kosher salt, and optional mayo in a blender or mini chopper. Blend until smooth, taste, and adjust seasoning as needed. Set the sauce aside.
  6. Assemble Bowls: Pour a generous amount of avocado mojo sauce into serving bowls. Top with roasted sweet potatoes, onions, and your chosen protein for a hearty and flavorful meal.

Notes

  • Use wedges for sweet potatoes to create thick, crispy fries that your family will love.
  • If using pre-cooked protein such as meatballs, add them halfway through roasting to heat evenly without drying out.
  • Optional mayo in the sauce adds creaminess but can be omitted for a lighter version.
  • Adjust the amount of taco seasoning and smoked paprika based on your preferred spice level.
  • For a vegan version, use a plant-based protein and omit the mayo or substitute with vegan mayo.
